Liliko’i Mousse

It’s liliko’i (passion fruit) season here in Hawai’i and while our fruit is ripening on the vine, it’s time to start planning on what we will be doing with our bounty. Merriman’s Cookbook is making it easy as we are craving a sweet and tart dessert #recipe to share with all of you…Liliko’i Mousse. Don’t have the cookbook in your collection? No worries. You can find it for purchase at and also on dessert menus at both their Merriman’s Waimea and Merriman’s Kaua’i locations.

1/2 cup liliko’i puree or concentrate (often frozen)
4 tablespoons unsalted butter, softened
2 eggs
1/4 cup heavy whipping cream

If using frozen liliko’i, thaw and bring to room temperature. Using an electric mixer on low speed, beat liliko’i, butter and eggs together over medium heat in a double boiler for about 3-5 minutes, until just below the mixture reaches a very soft peak stage. Let mixture cool. Cover and chill in the refrigerator for several hours. The mixture can be prepared up to a day ahead.
Whip cream into stiff peaks. Gently fold whipped cream into chilled liliko’i mixture until well blended.

Spoon mousse into serving bowls, or get fancy and pipe mousse into the bowls in spiral peaks.

PS: If liliko’i puree or concentrate is hard to find in your area, check out Aunty Lilikoi, LLC and mail order her Unsweetened Passion Fruit Juice. Get it delivered straight to your mailbox.
