Liliko’i Mousse

It’s liliko’i (passion fruit) season here in Hawai’i and while our fruit is ripening on the vine, it’s time to start planning on what we will be doing with our bounty. INGREDIENTS:

1/2 cup liliko’i puree or concentrate (often frozen)
4 tablespoons unsalted butter, softened
2 eggs
1/4 cup heavy whipping cream

PREPARATION:
If using frozen liliko’i, thaw and bring to room temperature. Using an electric mixer on low speed, beat liliko’i, butter and eggs together over medium heat in a double boiler for about 3-5 minutes, until just below the mixture reaches a very soft peak stage. Let mixture cool. Cover and chill in the refrigerator for several hours. The mixture can be prepared up to a day ahead.
Whip cream into stiff peaks. Gently fold whipped cream into chilled liliko’i mixture until well blended.

ASSEMBLE:
Spoon mousse into serving bowls, or get fancy and pipe mousse into the bowls in spiral peaks.
