Ingredients

Patty

  • 70% Local Makaweli Ground Beef (Overall Amount Up To You. 70-20-10 Ratio)
  • 20% Ground Wild Boar (Overall Amount Up To You. 70-20-10 Ratio)
  • 10% Ground Portuguese Sausage (Overall Amount Up To You. 70-20-10 Ratio)
  • Salt And Pepper (To Taste)

Burger

  • Toasted Taro Buns
  • Bibb Lettuce
  • Local Tomato (Sliced)
  • Avocado (Sliced)
  • Caramelized Onions
  • Crispy Tempura Onion Rings
  • Sweet Onion Marmalade

Chipotle Aioli

  • 2 Egg Yolks
  • 1 Tbs. Lemon Juice
  • 1 tsp. Garlic (Minced)
  • 1/4 tsp. Sugar
  • 1/2 tsp. Salt
  • 2 Tbs. Chipotle In Adobo
  • 3/4 Cup Vegetable Oil

Instructions

Prepare Patty.

  • Combine all the meats using a paddle attachment and stand up mixer.
  • Portion into approximately 8 oz. patties.
  • Season and sear, cooking to the desired temperature.

Prepare Chipotle Adobo

  • Using a food processor, add egg yolks, lemon juice, garlic, chipotle with adobo sauce and blend.
  • Slowly pour in vegetable oil to emulsify and season with salt and sugar.

Build Burger.

  • Build burger to your liking.
