- 70% Local Makaweli Ground Beef (Overall Amount Up To You. 70-20-10 Ratio)
- 20% Ground Wild Boar (Overall Amount Up To You. 70-20-10 Ratio)
- 10% Ground Portuguese Sausage (Overall Amount Up To You. 70-20-10 Ratio)
- Salt And Pepper (To Taste)
Burger
- Toasted Taro Buns
- Bibb Lettuce
- Local Tomato (Sliced)
- Avocado (Sliced)
- Caramelized Onions
- Crispy Tempura Onion Rings
- Sweet Onion Marmalade
Chipotle Aioli
- 2 Egg Yolks
- 1 Tbs. Lemon Juice
- 1 tsp. Garlic (Minced)
- 1/4 tsp. Sugar
- 1/2 tsp. Salt
- 2 Tbs. Chipotle In Adobo
- 3/4 Cup Vegetable Oil
Instructions
Prepare Patty.
- Combine all the meats using a paddle attachment and stand up mixer.
- Portion into approximately 8 oz. patties.
- Season and sear, cooking to the desired temperature.
Prepare Chipotle Adobo
- Using a food processor, add egg yolks, lemon juice, garlic, chipotle with adobo sauce and blend.
- Slowly pour in vegetable oil to emulsify and season with salt and sugar.
Build Burger.
- Build burger to your liking.
- Enjoy!
